Tip from Phiroma Kitchen: Use ghee over oil for khichdi — it elevates both texture and flavor, especially with whole cumin and hing.

Instructions :

  1. Rinse & Soak:
    Wash rice and dal. Soa for 15 minutes.
  2. Prepare Base:
    In pressure cooker, heat ghee. Add cumin, bay leaf, hing. Sauté lightly.
  3. Add Everything:
    Add soaked dal-rice, turmeric, salt, chopped vegetables (optional), water. Pressure cook for 2 whistles.
  4. Final Touch:
    Open, mix well, add garam masala, garnish with coriander. Serve hot with curd or pickle.
